Roasted Cauliflower with Canadian Bacon and Whipped Chipotle Feta

Ingredients

WHIPPED FETA

  • 6 ounces feta cheese
  • 2 ounces goat cheese
  • 1/4 c. olive oil
  • 2 tablespoons lemon juice
  • 1/8 tsp. garlic
  • 1/2 chipotle pepper in adobo sauce


ROASTED CAULIFLOWER

  • 1/2 head cauliflower, broken into small florets
  • 2 tablespoons olive oil
  • 2 tablespoons Parmesan cheese
  • 1 tsp. tumeric
  • 1 tsp. chili flakes
  • 3 green onions, finely chopped
  • 4 slices Canadian bacon
  • parsley, for garnish

Directions

  1. Preheat oven to 400 degrees F.
  2. In a food processor or medium bowl mix together feta, goat cheese, lemon juice, garlic and chipotle pepper. Blend until smooth and set aside.
  3. Place cauliflower florets in a Ziplock bag. Add olive oil and massage well to evenly coat. Mix together Parmesan cheese, chili flakes and turmeric. Sprinkle evenly over cauliflower. Spread florets on a greased, foil-lined tray and bake for approx 20-25 minutes or until the cauliflower has started to brown. Remove from oven and place in a serving dish. Mix with Canadian bacon and green onions and top with spoonfuls of whipped feta. Garnish with parsley and serve immediately.
