Preheat oven to 400 degrees Fahrenheit.
Add cooking spray to 12 cup muffin tin.
Peel and slice potatoes into thin rounds.
Add heavy cream, pepper, seasoning and Parmesan cheese to mixing bowl.
Stir until well mixed.
Add potatoes into mix so that they are well coated.
Tightly stack potato slices in each muffin tin.
Cover muffin tin with foil and bake for 35 minutes.
Unwrap and let cool in oven for 5 minutes.
Sprinkle Parmesan and fresh thyme onto potatoes.
Carefully loosen the edges of potatoes with a spoon and serve.
