Grapefruit & Goat Cheese Salad with Honey Dijon Glazed Spring Greens

  • 1 pkg. mixed baby spring greens
  • 1 pink grapefruit, quartered & divided
  • goat cheese, crumbled
  • 1/2 tbsp. honey
  • 1 tbsp. dijon mustard
  • 1/4 c. olive oil
  • salt & pepper, to taste


Combine honey, mustard, olive oil, salt and pepper. Stir unti combined. In large bowl toss salad greens with dressing mixture. Serve and top with grapefruit and crumbled goat cheese.
